For the hotel site: This is a great picture, but it's potential is waisted by being constrained in a box. The photo has plenty of atmosphere. Make the photo bigger to capitalise on the atmosphere.

As a template, this works quite well. It's generic enough to work with a wide range of content. It has a number of plus points such as:
As a hotel website design, this design is weak and doesn't not fulfil your goal of creating a strong web presence.
The generic quality that makes it a great template works against it for the purpose of promoting a hotel. The design offers nothing to get me interested about the hotel. There are also no visual clues to indicate the personality of brand of the hotel (the clean look suggets that it's an upmarket hotel, but you need to build on this as at the moment its not clear if that is an intentional suggestion).
Templates should be used as a starting point. So whilst this template is more or less ready to submit to Theme forrest, I think you need to go to the next step and personalise it for the hotel.
You've got some great images, so I would draw on strength of these by making them bigger to increase their impact and let the images do the majority of the 'selling'. You might have to partly break away from the layout of the template. However, a good template should aid a design without constraining it and I think at the moment, your template is working against your goals.-

Spacing on a lot of places is too different, right here it's too much between the elements

Spacing. The type is too close to the divider, makes me feel claustrophobic

Typography - is this Arial? Check out Google fonts or Cufon fonts. This menu is too boring, too old. One good font will fix that.

For me, this is a clean looking template, that looks generic in terms of usage - can be used not only for hotels, but for other businesses also.
I think I have seen a lot of similar ones on ThemeForest. If you want to get this accepted, you will need to make it more special, different. I know how hard it is to get a template approved there! Most of the buyers, if they are choosing something general looking, they usually go for the best that have already been downloaded thousand times - because it works.
For a client, a hotel in this case, it's good that the rest of the site does not stand out and draws the eye towards the photos, which are the single most important thing for a hotel site. I really like the cleaniness and simplicity.
